You are building 2 parts kit SKSs up to factory and, working within the limits of what you have on hand, while keeping the price down. Items you have on hand;
Parts to complete 2 SKSs. 1st will be 3 numbers, receiver, stock, then all other parts. 2nd will be 4 numbers due to mag. Receivers are '57 Chinese, one early(6 digit) and one late(2M).
The correct stocks for the '57s are threaded long collar, blade cut, with sling swivel on the bottom. You have 2 Romanian stocks that fit the bill, but no blade bayonets and they are expensive. You also have 2 Chinese stocks. One threaded long collar, spike cut, with sling swivel on the side. and one threaded short collar(but action fits), spike cut, with sling swivel on the bottom. You DO have 2 spike bayonet assemblies so you could complete the rifles. You also have aftermarket stocks you can use to do custom builds or just have them in plastic wrap.

So, the question is, which stocks do you use? Neither wood stock is actually correct, but do you go for the complete rifle set up, go for the anatomically correct stock and have 2 rifles sans bayonets, or go synthetic? Keep in mind there is also a 3rd barreled receiver that is already going synthetic as a custom build.

Kinda depends on with your going to do with them.

If you're going to flip them soon, I'd set them up with the spiker bayos just to have them together completed.
I have a couple like that too, that I'll likely turn over on Calguns. I've had them for years  :-\ PAX

Plus I would add that the Romy stocks are probably going to be much harder to replace when you really need them than spiker Chinese stocks will ever be.
Personally, I'd slap the Chinese wood stocks and spikes on them and flip them as non-matching shooters as quick as I could.  The $$ you receive could be put to good use on the next build.  thumb1

I say one of each...it's not like Romanian barreled receivers are likely to show up....and you have the stocks already. A bayonet will come along for it.
I suggest the six digit for that. We could have six digit Sarco bubbas together. :)

OR, you could get nuts about it and put it in a Yugo stock, and get an easier to obtain cheaper, 59/66 blade. Free buttpad!  thumb1

I trust you are planning on using that pretty sandy blonde stock for at least one of them? 
The grain on that one of the lot is striking.

Actually I prefer the dark wood, that and the fact I just sold the light stock to Briar who was looking for a stock suited for his '57. Thought I'd be the enabler for a change. chuckles1

Actually just had another thought; Since the Israeli Capture is duel cut for bayonet, I could pull the blade bayonet off of it and throw a spike on it. Then I could put the blade on the 6 digit with the Romy stock. Hmmmmm, what to do, what to do!!!

Not really, just trying to offset the enabling you guys do to me for once. I'll leave the real competition up to you and Justin rofl rofl

Oh, and part of my problem has already been solved. Had an acquaintance contact me looking to do a trade for a shooter SKS in OEM configuration with a spike bayonet. Slapped the '60 letter gun barreled receiver together, with one complete parts kit(everything fit like a glove including bolt and headspace), into a Chinese side sling threaded stock and sent him some pics.
Fun tidbit of info on this one, All other parts beyond the stock and stripped barreled receiver are matching with last 4 digits being 1446. The receiver is N0976, then the stock is serialed 1846. Only the hundreds digit is off between the stock and the other parts.

Where you can find them....they are pretty reasonable, a sub $250 adjunct upgrade to your brick of a pistol. Tempting. Do you really need another caliber?  whistle12

I was trying to point this notion towards the wife for a future gun purchase.  Got the hard eye roll... and this morning, before coffee almost got my head ripped off for suggesting a sub $20 BB gun for yard fun.

Are these also made in Lima Ohio like the pistols?  I used to live in a suburb of there in the 70s...if you can even give it credit of urb.

Carbines are all made in Mansfield, only the 45 handgun is made in Lima. The 40 handgun is made in Gallon

As for me getting it, I was thinking something for HD with more thump to it. I suppose, if I don't like it, we could always work out a trade or something. MAYBE! :)

Anyway, guy decided he wanted to keep the HP Carbines he has so I settled on 500rnds of XM855, 500rnds of XM193, and some Speer gold dot 124gr 9mm HP for my 995. Gonna try and talk him into a few boxes of .223 as well.
