What parts should I have for my SKS?
For a real SHTF/TEOTWAWKI situation where you are relying on an SKS as your primary rifle, I would recommend 1-2 firing pins, extractor and spring, firing pin retention pin, op rod and spring (because it could fly away if you make a mistake in field stripping), gas piston (because it’s a very long rod. I’ve never seen one bent but…), a spare complete trigger group tested for function before SHTF, and a broken case extractor.

Might me easier/ cheaper to just have a spare SKS

I’d offer that the bare minimum would be a spare firing pin :)

Definitely, a spare SKS (or 3) is the correct answer!
The next best answer is what P32 mentions: a spare firing pin as there are numerous incidents of those bending or breaking. I would also say you need all the tools, solvents, oils, etc. (preferably in their own standalone kit) that you would need to keep it in good operating condition.

That would be the way to go.
